the sub salad recipe

The Sub Salad

Ingredients
  

  • 2 heads Romaine Lettuce
  • 1 can White Beans
  • 3/4 cup Artichoke Hearts
  • 3/4 cup Roasted Red Pepper
  • 1/4 cup Red Onion
  • 2 tsp Apple Cider Vinegar
  • 1/4 cup Olive Oil
  • 1 tsp Lemon Juice

Instructions

  • Wash romaine lettuce and chop up into bite size pieces
  • Add to a salad bowl and add in the white beans
  • Chop up the artichoke hearts, roasted red pepper, and red onion and add into the bowl
  • In a separate bowl mix together olive oil, apple cider vinegar and lemon juice
  • Whisk to make it creamy 
  • Add to salad and toss until evenly mixed

Notes

I like to use kitchen scissors to cut my lettuce!
