Mediteranean Gut Friendly Salad

Ingredients
  

  • 2 bunches parsley
  • 1/2 head romaine
  • 1/2 cucumber
  • 1/2 head cauliflower
  • 1/2 can chickpeas
  • 1/2 carton tomatoes
  • 1/2 lemon
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar

Instructions

  • Chop parsley, romaine, and cucumber
  • saute cauliflower and olive oil in a pan and chop
  • Add parsley, romaine, cucumber, chickpeas, and cauliflower to a bowl
  • In a separate bowl, mix dressing ingredients
  • Add dressing to salad and mix
