Crsipy Zucchini Chips

Ingredients
  

  • 2 Zucchinis
  • 1 cup Almond Flour
  • 1/4 cup Sliced Almonds
  • 1 Egg
  • 1 tsp Olive Oil
  • Salt

Instructions

  • Preheat oven to 350 degrees.
  • Slice zucchini into 1 inch rounds.
  • In one bowl, add almond flour and sliced almonds.
  • In a second bowl, whisk the egg.
  • Take zucchini and dip both sides in the egg and then both sides in the almond mixture.
  • Drizzle olive oil on baking sheet and place slices on top.
  • Sprinkle slices with salt.
  • Bake until crispy - can broil for last 4 minutes if desired.
  • Enjoy!
