Ingredients
- 2 bunches parsley
- 1/2 head romaine
- 1/2 cucumber
- 1/2 head cauliflower
- 1/2 can chickpeas
- 1/2 carton tomatoes
- 1/2 lemon
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
Instructions
- Chop parsley, romaine, and cucumber
- saute cauliflower and olive oil in a pan and chop
- Add parsley, romaine, cucumber, chickpeas, and cauliflower to a bowl
- In a separate bowl, mix dressing ingredients
- Add dressing to salad and mix
