Lemon Blueberry Bread
Move over banana bread, we have a new fan favorite bread in town! This Lemon Blueberry Bread is one of my favorite healthy dessert recipes and uses minimal ingredients. It takes 5 minutes to whip up and is so healthy you could eat it for breakfast!

Ingredients
- 1 & 1/2 cups Almond Flour
- 1/4 cup Coconut Flour
- 1 tsp Baking Soda
- 3 Eggs
- 1/4 cup Maple Syrup
- 1/4 cup Coconut Oil
- 1/4 cup Almond Milk
- Zest of 2 Lemons
- 2 Lemons Juiced
- 2 tbsp Chia Seeds
- 1/2 cup Blueberries
Instructions
- Preheat oven to 350 degrees
- In a large bowl mix almond flour, coconut flour, baking soda, eggs, maple syrup, coconut oil (heated), almond milk, lemon zest and lemon juice
- Mix and add in chia seeds and blueberries
- Put in bread pan and bake for 35 minutes
Notes
For the best texture - make sure a knife can be inserted into bread and it comes out clean before you take it out of the oven

OMG I love this recipe!
Here in Australia, we don’t have ‘Almond Flour’ so I”ve used Almond Meal (I guess they are the same). I also substituted Green Banana Flour for the coconut flour. It seemed to work well, as I’m guessing the Almond Meal is a bit ‘wetter’ than your flour – and the Banana Flour is quite dense and thickened up the wet mixture really well. I also sprinkled coco nibs on top. Honestly, everyone loves it – its gone before it cools!
