3 Ingredient Green Bean Salad
This 3 ingredient green bean salad has been one of my favorites since I was a little kid. I love it because it is not only such an easy recipe to make but it also tastes amazing and is the perfect healthy meal prep idea for the week. The longer the salad marinates in the homemade dressing – the better it tastes!

Ingredients
- 1 lb Green Beans
- 1/4 cup Pine Nuts
- 1/2 cup Red Onion
- 3 tbsp Olive Oil
- 2 tsp White Balsamic Vinegar
Instructions
- Clean and chop the ends off the green beans.
- Steam on the stovetop for about 10 minutes - you don't want them getting mushy.
- Take off stovetop and run under cold water.
- Drain and put green beans in a bowl and put in refrigerator for about 15 minutes.
- Slice the red onion into long, thin slices.
- Place pine nuts in a fry pan and brown on low heat.
- Add red onion and pine nuts to the green beans.
- Add olive oil and white balsamic vinegar.
- Salt and pepper to taste.
- Mix and keep in the refrigerator until ready to serve.
