Crispy Zucchini Chips
Time to spice up your boring nightly side dish with these crispy zucchini chips. They are gluten and dairy free and make for the perfect healthy, fun meal.

Ingredients
- 2 Zucchinis
- 1 cup Almond Flour
- 1/4 cup Sliced Almonds
- 1 Egg
- 1 tsp Olive Oil
- Salt
Instructions
- Preheat oven to 350 degrees.
- Slice zucchini into 1 inch rounds.
- In one bowl, add almond flour and sliced almonds.
- In a second bowl, whisk the egg.
- Take zucchini and dip both sides in the egg and then both sides in the almond mixture.
- Drizzle olive oil on baking sheet and place slices on top.
- Sprinkle slices with salt.
- Bake until crispy - can broil for last 4 minutes if desired.
- Enjoy!
I have them every week, so delicious! I love to add them to my salad. Crunchy and adds to the flavour!
