The Sub Salad

I love a good chopped salad and this Sub Salad is one of my favorites because it is filled with so much flavor. This is the perfect salad for the base of any protein!

The Sub Salad

Prep Time 15 minutes
Servings 5

Ingredients
  

  • 2 heads Romaine Lettuce
  • 1 can White Beans
  • 3/4 cup Artichoke Hearts
  • 3/4 cup Roasted Red Pepper
  • 1/4 cup Red Onion
  • 2 tsp Apple Cider Vinegar
  • 1/4 cup Olive Oil
  • 1 tsp Lemon Juice

Instructions

  • Wash romaine lettuce and chop up into bite size pieces
  • Add to a salad bowl and add in the white beans
  • Chop up the artichoke hearts, roasted red pepper, and red onion and add into the bowl
  • In a separate bowl mix together olive oil, apple cider vinegar and lemon juice
  • Whisk to make it creamy 
  • Add to salad and toss until evenly mixed

Notes

I like to use kitchen scissors to cut my lettuce!
