Healthy Cranberry Orange Muffins

These muffins were the biggest hit over the holidays. So easy to make and they are gluten free and dairy free – so it really is a no brainer! My family couldn’t even tell they were healthy.

Healthy Cranberry Orange Muffins

Ingredients
- 2.5 cups Almond Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 3 Eggs
- 1/3 cup Maple Syrup
- 1/2 Orange Just The Juice
- 2 tbsp Coconut Oil
- 1/2 cup Dried Cranberries
- Zest of 1 orange
Instructions
- Preheat oven to 350 degrees
- In a large bowl, mix flour, baking soda, zest of orange and salt
- In a small bowl, mix eggs, maple syrup, and orange juice
- Melt coconut oil and add into small bowl
- Add small bowl ingredients to large bowl and mix well
- Add dried cranberries
- Scoop into muffiin tins and bake 30 minutes
- Test with a fork to be sure they are fully cooked through
- Let cool and enjoy!
