Dairy Free Butternut Squash Soup

January is prime soup season and this healthy butternut squash soup is one of my all time favorites. It is dairy free, gluten free and only used 3 main ingredients. I love adding healing spices like curry, cayenne pepper and ginger to take it to the next level!

Dairy Free Butternut Squash Soup

Ingredients
- 1 Butternut Squash
- 1 Yellolw Onion
- 4 cups Chicken or Vegetable Broth
- 1/2 tsp Cayenne Pepper
- 1 tbsp Curry Powder
- 1 tsp tsp Ginger Powder
- 1 tbsp Olive Oil
Instructions
- Heat up olive oil in a soup pot on the stovetop.
- Dice up yellow onion and add to pot.
- Cook until golden for about 8 minutes.
- Peel and cut up butternut squash into large cubes and add to the pot.
- Add in curry, ginger, and cayenne pepper.
- Add in broth and bring to a boil.
- Once boiling, turn down to simmer and cook for an additional 30 minutes.
- Once cooked, take off stovetop and use a blender to blend all the ingredients up - I would recommend using a hand blender.
- Add salt & pepper and it’s ready to serve.
