These muffins were the biggest hit over the holidays. So easy to make and they are gluten free and dairy free – so it really is a no brainer! My family couldn’t even tell they were healthy. 

Healthy Cranberry Orange Muffin Recipe

Healthy Cranberry Orange Muffins

Cook Time 30 minutes
Servings 6

Ingredients
  

  • 2.5 cups Almond Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 Eggs
  • 1/3 cup Maple Syrup
  • 1/2 Orange Just The Juice
  • 2 tbsp Coconut Oil
  • 1/2 cup Dried Cranberries
  • Zest of 1 orange

Instructions

  • Preheat oven to 350 degrees
  • In a large bowl, mix flour, baking soda, zest of orange and salt
  • In a small bowl, mix eggs, maple syrup, and orange juice
  • Melt coconut oil and add into small bowl
  • Add small bowl ingredients to large bowl and mix well
  • Add dried cranberries
  • Scoop into muffiin tins and bake 30 minutes
  • Test with a fork to be sure they are fully cooked through
  • Let cool and enjoy!
